Updating to Big Sur

Should I be cautious updating from Catalina to Big Sur? Is the process "easy"? And once done, is FontBook able to delete/remove unwanted fonts that come with the new OS (e.g. NOTO, etc)?

Should I be cautious updating from Catalina to Big Sur? Is the process "easy"?

You may have to update printer/scanner/other peripheral software to work with Big Sur. You should confirm your devices are compatible with Big Sur (or can be made so).

And once done, is FontBook able to delete/remove unwanted fonts that come with the new OS (e.g. NOTO, etc)?

Your apps are supposed to filter out what you don't want to see based on the groups you create in Font Book. They were never supposed to load every font found anywhere on disk.
