Changing an admin user to standard user
I have two admin users on my iMac, I am running Big Sur.
How do I make one of them a standard user without deleting it?

Correct. I had to create a second Admin account on one of my Macs to see what might be going on. Unfortunately I have no problem changing an account from Admin to Standard.
Uncheck the Option>Allow user to administer this computer, outlined in Change Users & Groups User preferences on Mac - Apple Support.

Make Sure you have more than one admin user.
Be sure to "Logout" on the User Account which "is still unable to be unchecked."
Thanks. I am logged out of the other admin user. The lock is also unlocked for the preference pane..
That article does not tell you how to switch an existing admin user to a standard user. I have two admin users. I want to switch one of them to a standard user.
Thanks. unfortunately It is greyed out and I am unable to uncheck it. I even tried logging in as the other admin user and it is still unable to be unchecked.
It certainly doesn't look like it is logged out.

In other words, you have to be logged out of the account you wish to change.

Try to check in the User Menu in the Menu Bar, and see if the user has the orange check mark on it. Then take the screenshot of it.
