How can I retrieve deleted text messages

If you're referring to SMS text messages, green bubbles, it may be that the text message is saved in a previous backup or on another device, if you use handoff to send text messages from other Apple devices: Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

Keep in mind that when you restore your iPhone with a backup, it'll restore the data on your iPhone to the time the backup was created. Data that is not synced or stored in iCloud may be lost.

If it's an iMessage that you're trying to retrieve, blue bubbles, if you use Messages in iCloud, deleting the iMessage message on one device deletes it on all your devices, and it can't be retrieved. However, if you aren't using Messages in iCloud, it may be saved in a backup or on another device that you use iMessages with.

For your call history, that may be stored in a previous backup, depending on when your most recent backup was made.
