Can multiple profiles be used for apple tv+ subscriptions for my family so that I can watch the same show as my mother and we can be at different episodes? I'm thinking like Netflix where we can all have a separate profile

Profiles within an Apple TV+ subscription? No.
But the Apple subscriptions are associated with an Apple ID, and since everyone has their own Apple ID, and since Family Sharing is in use, yes.
Just not as a profile within a subscription.
And for completeness, sharing an Apple,ID is bad.

So if family sharing is on, we should all be able to access the same subscription, but be able to watch the same show at different intervals?
