I have been asked by Apple to change the email address on my Appleid by October 26.
(1) I received the email from Apple this afternoon but no longer found that email in my inbox. Was that email actually from AppleSupport or a scam?
(2) If I change the email address of my AppleID, would that change the "family sharing" with my daughter?

That does not sound like a legit email from Apple.
As long as you followed the steps outlined in https://support.apple.com/en-us/HT202667 and actually provided by Apple to change your email it shouldn’t affect family share.
