If I get a water detections notice and I emergency override, will the notifications still continue to pop up when trying to charge it? (Ex: I emergency override, then disconnect my phone, and connect it again. Will the water detection still come up?)

Yes, that notification will come on once your iPhone is connected again and it detects moisture after your emergency override. This does not mean that there was no damage done initially when the water first got in.
