All music downloads sold in the iTunes Store are in AAC/256 format. You can create an MP3 version by the procedure linked by Brian. Note that the procedure creates a new MP3 and leaves the original AAC in place, so if you need the MP3 for something, make sure you grab the right one.

You can also purchase music downloads in MP3 format from Amazon Digital Music, Bandcamp, Beatport, etc. Download the MP3 the normal way and add it it your iTunes library.
