If it has a screen lock passcode the thief will only get 8 tries to guess it and get in. They can erase it and probably will to try and sell it. If they erase it by restoring it in iTunes, you will no longer be able to track it in find my.
However, as long as it remains listed as your trusted device at your AppleID when you login at https://appleid.apple.com/ then activation lock remains in effect and will prevent anyone from activating and using it.
In the USA report it to your carrier as well so they can blacklist it (all USA carriers participate in a universal blacklist also honored by carriers in Canada and Mexico).
If you set up Find My on it and you erase it you will not be able to track it if it is turned on. Also if you purchased Theft and Loss coverage don't do that, it will void your policy.
