Almost ready to move from Polar to Apple Watch but being almost 70 and having fallen recently I don’t wear spectacles any more while running.
Can the Watch workout screen be set to show only heart rate so I can see it as well as on the Polar?

You can also Adjust text size and other visual settings on Apple Watch, and Use Zoom on Apple Watch. The Apple Watch doesn’t have a watch face that can only display the Heart Rate.
