For my medical information I need to have an updated version of safari. I’m very challenged when it comes to stuff like this. I don’t know how to do that. Can someone tell me how to update safari on an iPhone 12 max pro?

You can't update Safari independently of iOS. You can update Safari by updating the software on your iPhone. Go to Settings > General > Software Update to check for an update.
