my iphone 11 is paired with my car's Bluetooth and works fine when i don’t have my apple watch connected but if I have my apple watch connected to my iphone the car bluetooth disconnects. How do I get my iphone not to disconnect?

The Apple Watch being paired to your iPhone should not have any impact on your iPhone being connected to your vehicle. I've never seen or heard of that behavior. Try removing the iPhone from your vehicle, and then pair the iPhone back to the car while you have the Watch with you.

That is not normal behavior, and since removing the pairing from the car and then pairing it again does not help, then I suggest that you use the Get Support link at the top of the page to contact Apple Support as I suggested earlier. If you followed all of the steps in the link I provided, there isn't anything anyone here could do.
I have deleted and re connected multiple of times. as soon as I remove the watch it works fine and doesn't disconnect half way through a song or direction, or a call.
