Apple differentiates “updates” (generally minor changes and fixes, unlikely to affect apps) from “upgrades” (larger changes and enhancements, can and sometimes will require app updates or upgrades), and here you’re looking for an “upgrade”. Software Update doesn’t automatically offer upgrades, and you’ll generally have to explicitly perform an upgrade.
In general, check 🍎 > About This Mac, and post the MacBook Pro model year. From that, we can tell you your options. Older MacBook Pro models won’t be able to upgrade to newer macOS versions, while more recent models will.
Mojave 10.14 is the last version that can run older 32-bit apps, such as Microsoft Office 2011 and earlier.
Catalina 10.15 and Big Sur 11 both require all apps to be 64-bit.
Check that all your apps are 64-bit, and upgrade or retire or replace any remaining 32-bit apps. Use the Go64 tool to check for these. Office 2016, Office 2019 (current), Office 2021 (upcoming), or an Office 365 subscription will be required, or switching to LibreOffice or such. The Apple iWork apps Pages, Numbers, and Keynote apps can read and write many Office documents, too.
Have a backup before you upgrade. Upgrades don’t fail very often, but they do fail. And you might find some critical app is not working on the newer version of macOS, and need to revert. Your backup is the path to recovery, as there is no downgrade.

Safari only update when you do the new mac os software update.
for this you go into system preferences > software update.
What year is your macbook ? you can find this by clicking on the little apple logo on the top left of your screen then click on "about this mac" it will tell you what is your macbook year.
If your mac is to old you might unfortunately not be able to Update it.
maybe you should try installing a other browser than safari like google chrome for example.

Mojave runs both 32- and 64-bit apps, so you don’t need to deal with that yet.
If upgrading to Catalina or Big Sur, and if you’re not using any of those older 32-bit apps, you need do nothing about them.
If upgrading to Catalina or Big Sur and you are using one or more of those 32-bit apps, you will have to update, upgrade, replace, or retire the app(s) involved. How you'd do that varies by app, and by your particular requirements.

Thank you. I already have Google Chrome but I like Safari better and all my passwords would have to be changed.
Thank you very much. I will create a backup and install Mojave. I have check my apps with Go64 link, there are only 10 app with 32-bit. I am not sure what I do with them.

That Mac will upgrade to Mojave (10.14), Catalina (10.15), or to the current Big Sur (11), and is also (the oldest MacBook Pro model that is) supported with the upcoming Monterey (12).
An upgrade to Mojave will get you a newer Safari browser and other fixes and enhancements without (potentially) disrupting your apps.
To Big Sur will get you all of what is available including the newest Safari, but you will want to confirm all your important apps (see Go64 link, above) and the vendor-provided drivers for your printers and scanners are all compatible with Big Sur.
Create a backup prior to the upgrade.
