I am currently trying to pair an Apple Watch Series 2, that was last used in 2017, with an iPhone 12 Max Pro. Each time I attempt to do this, the iPhone tries to update my watch but then come back saying it is "Up to date..." and fails to pair. I believe this is due to the fact that it is still running off of watchOS3.2.3. Any ideas as to how I can get this watch updated to watchOS 6 so it will pair? Thanks
I assume you are running iOS 13 or later on your iPhone. If so, the quickest way to get this resolved is to make an appointment at the Genius Bar in an Apple Store near you and let them look at your watch & iPhone. mOtherwiuse use the online Apple Support. Either way:

No such message displays. It only says, "Your software is up to date."
Pair it with an ios13 phone and update it from there.
