I have downloaded the beta but need to remove it for work to get some old stuff back.
I have not got the latest software on my Mac as its too old but I can't restore the older IOS back to my phone without new Mac software. could anyone please help. ideally need to do this without waiting for the next iOS update!

You don’t require the very latest operating system on your Mac (MacOS Big Sur), but you do require some reasonably recent version. Failing that, visit an Apple Store and seek assistance there.

Find a friend that has a current copy of either iTunes on a PC or a newer Mac and then follow the instructions on the Public Beta page on how to roll back. Bad idea to test a beta if you don't have the proper resources.
Restore back to ios14 after downloading beta
