How do I connect my Apple Watch to a new phone but I still have my old phone connected to my Apple Watch and don’t know how to disconnect it

broke my iPhone 7 and cannot get any info from it (says it is disconnected). All my info seems to be on my apple watch series 3. Will buy new phone but can I restore everything from my watch to the new phone and how do I do this?

No, you can’t restore data from a watch to a phone. Hopefully you have been regularly backing up your iPhone 7 (Ideally, automatic nightly backups), so you can restore your information from your computer or iCloud backup to the new phone.
