Recently purchased I pad air 4th gen for wife. In her excitement she did not unpack everything prior to throwing away the box!🤬
so we now find ourselves short a charging cable. After researching it appears there are two kinds of usb-c cables.
Which one do I buy???

Assuming that you unpacked the 20W Power Adapter that was supplied in the box, you will require a USB-C to USB-C cable. Apple market at least three - their own charging cable in both 1m and 2m - and better quality third-party cables from third party manufacturers such as Mophie and Belkin:
