iMessage won’t keep 2 numbers when changing SIM cards

I have an iPhone 11 from the US, using T-Mobile. The phone is unlocked and paid off. I am temporarily living in Europe and got a SIM card here. When the Vodafone store in Europe put in my EU SIM, iMessage asked me if I want to deregister my US number, which I did not do. I was able to receive iMessages at both numbers and even send new messages from my US number while using the European SIM card for data.

Yesterday, I put my US T-Mobile SIM back in to check if I had any SMS or voicemail messages, and now iMessage won’t allow me to have more than one phone number anymore.

I tried rebooting my phone, changing SIM cards while in Wi-Fi, turning off and on iMessage and FaceTime, and even logging out of iMessage and FaceTime all together.

in the iCloud settings, I can add my US number as one of the numbers, but it sends a verification code, so I have to put the US SIM back it, at which point it deregisters the EU number.

How do I get back to the way the Vodafone store had it, pictured above, where I can send and receive iMessages at both numbers?

Hello and welcome to Apple Support Communities  DJ Metropolis,

Thank you for contacting us. You have come to the right place and we are happy to assist you. We understand you're having an issue with your SIM cards.  We can understand why you’d reach out for a solution. To start, make sure you have the most current operating system on your device. (Settings > General > Software Update) Have you considered using an eSIM? If your carrier supports eSIM, it may resolve your issue and you won't have to take SIM cards out.

DJ Metropolis,

Thank you for getting back to us. Were you working with your cellular providers when switching the SIMSs?Does iMessage give you an error message, "waiting for activation"? You will need to contact both carriers so they can activate the SIM cards. It's a pretty easy process, and you will need the IMEI number under General > Settings > About. We have included a couple links for you to look over once the carriers get your SIMS activated.

Ok, so I setup the eSIM for T-Mobile US, and it shows that it is working with both nano SIM on Vodafone and T-Mobile eSIM, however, now I cannot make phone calls and iMessage will now not register on EITHER numbers. What is going on? I need my phone for business and now the only thing working is mobile data, no voice, SMS, or iMessage.
