Centre Stage is a feature of the new 2021 models of iPad Pro, iPad9 and iPad mini6 - all of which are fitted with the necessary front and rear ultra wide-angle cameras.
Your older model iPad Pro does not have the necessary camera for Centre Stage to be enabled. Updating the system software will not enable this feature for older models of iPad and iPad Pro.
