I cannot install the most recent update on my iPhone. It downloaded, but it will install.

Assuming you're trying to update your iPhone 8 wirelessly (via WiFi), see this support article:--> If your iPhone, iPad or iPod touch won’t update.
If the issue persists, try to update it using a computer running iTunes (PC) or Finder (Mac).
