HP offers two identical versions of its Install HP Easy Start software. You want the one from March 2021. Although Apple's built-in AirPrint networked printer support handles most of the HP Envoy 5000-series printers, it does not support the explicit 5000 model.
Once you install that HP Easy Start software, and install any relevant drivers, you must re-add the printer and choose the appropriate HP Envy 5000 driver before the device will function. You re-add by right-clicking on the printer entry in System Preferences > Printers & Scanners, and choosing Reset printing system…

The link that I provided assumes that you are on macOS Catalina and does not auto-detect Big Sur. You need to change the operating system to macOS 11, and then the March software will be present.
Hi,
If there is a problem with HP Easy Start, you may want to have a look at the HP Easy Admin tool for Mac (https://support.hp.com/us-en/document/c06164609) which allows driver downloads without a connected printer.
When I go to the link to download the HP Easy Start software, it only offers me the option of version Nov 2020. How can I get the March 2021 version? I have the so called HP Smart App which does nothing! So frustrated.....
Thanks for your help however I keep getting caught in a runaround on the HP website and cannot get driver installed. Guess I’ll buy another printer when I need to print docs.
Choose a printer that says it is Apple AirPrint compatible (networkable), or is in this AirPrint list. A printer on this list means not having to deal with the printer vendor again.
