How do I change my name in the header of an email?

In an outgoing email, how do I change the way my name appears in the header, above the subject (e.g. If I want to change 'Fred' to 'Ralph' in the header "Fred <**** @ ****.net>")

On a case by case approach, you can put anything inside double-quotes for your name, as long as you preserve the angle-bracket format:

"Ralph" <****@****.net>

See the allowable Email addresses.
