If I gift an iPhone from the US to a friend in Canada, does the limited one-year warranty apply? What about when they travel to Europe or other country and need repair?
1. It's at the discretion of the people at the service center. They might not be able to replace it with an unit that's functionally identical to the original.

US iPhones are the only iPhone with the mm wave antenna.
They can’t be replaced by stores or repair centers outside of the US.
They will refuse warranty service based on that.
It would be so much better if you simply sent your friend the money and they bought their phone in Canada. It would avoid ALL issues which can come up from buying a phone in one country, to be used in another country. Even if the countries share a border.
