Xcode tyranny, file extensions

Xcode seems to usurp power over file extensions as also highlighted here: https://rud.is/b/2020/02/06/prying-r-script-files-away-from-xcode-et-al-on-macos/.

For many file types such as .R, I am unable to set default applications for “Open With”. Xcode always ends up taking back control !

Do I need to uninstall it as the only solution ?

MacBook Pro 13″, macOS 11.5
