You can backup your iPhone directly to a Mac or PC:

How to back up your iPhone, iPad, and iPod touch with your Mac - Apple Support

How to back up your iPhone, iPad, or iPod touch with iTunes on your PC - Apple Support

But I do not believe you can directly make that backup go to an external drive.
