How do I transfer data from iPhone 5s to iPhone 7 Plus?

I have an iPhone 7 Plus I've been using as an iPod (no sim card). I want to give the phone to my wife. How do I erase all my files and apps and give it to herr to take her sim card from her iPhone 5S sbd put it in the 7-Plus, then transfer her data?
