Sidecar Issues - Device Timed Out

I am running Big Sur on a new iMac with Apple M1 chip and I have a new iPad Pro 11-inch updated to 14.8. When I attempt to connect my iPad as a second display with sidecar I get the error:

Steps I have already taken:

Fully updated both devices
Restarted both devices
Tried connecting with handoff enabled and disabled on both devices
Connecting via cable - successful connection but no sidecar - I also tried without WiFi on my iPad to just connect via cable
Connecting via Bluetooth - successful connection but no sidecar

What am I missing? I can use my iPad with sidecar on my MacBook Pro successfully.
