Edited iPhone images appear desaturated and colour switch in other apps such as Instagram when uploading.

i run a food Instagram and the aesthetic of my page is for bright, high quality pictures. I edit my pictures in the photos app, turning up the saturation, definition etc but when I uploaded it as new post on Instagram there is a colour shift when the picture goes into the edit mode. It seems the desaturated the images and turn them very yellow. Can anyone help with this? It’s been doing it for months now and also happened with my iPhone XS Max. Very frustrating as the images do not appear as they do in my photos app.
