Hey there !!
I am using series 3 apple watch and I have updated to watch OS 8 but i don’t have the assistive touch option here what’s the problem?
Apple Watch Series 3, watchOS 8
Assistive touch must be turned on in settings—> Accessibility —> assistive touch on your Apple Watch device.
