IOS and iPhone 6s Plus

Earlier today I have updated to IOS 12.5.5 and have seen that the IOS 15 update is supported by my device (iPhone 6s Plus) but I am not able to update further than IOS 12.5.5, any help would be appreciative.

Yes, iPhone 6s can update to iOS 15. But the fact your phone says you are up to date at iOS 12.5.5 is indicative that you likely have iPhone 6, not 6s.

Go to Settings > General > About > Model and double tap it to see the exact model phone you have. If as is suspected, you have iPhone 6, you cannot update to iOS 15 ever.
