I have done yeah. Both Apple Watch apps on my phones say pair new or existing apple watches. So on my new phone, I have tried pairing saying existing watch and it just comes up with the message saying ‘unable to connect to your Apple Watch, please try again’.
Did you remove the activation lock from your old phone?,what you wrote is a classic sympton of activation lock to another phone.

Did you unpair the watch from your old phone first?,a watch can only be paired to 1 phone at a time.
No because I’m scared that will get rid of all my activity data and wipe the watch totally. I was going to do that but then worried about losing my nice streak and fitness data etc
