Will this not work for a MacBook Air M1 running Big Sur 11.6 and a iPhone 12 running iOS 15? My devices meet requirements, just not the operating systems. Is there a workaround? I don’t want to have to use Catalina on my Mac or iOS 13 on my phone.
Will what not work? A workaround to what? If your Mac and iPhone meet requirements, upgrade each to latest operating system. You don't have to keep using Catalina or an older version of iOS if each device meets requirements as you say. It's a personal choice,

Exactly what does not work?
I have an M1 MacBook Air with macOS 11.6 and an iPhone 11 Pro with iOS 15 and have not come across any issues.
So again, what does not work?
People are trying their best to help you, but you must be more forthcoming with problem details. Without our questions being answered, and once you do answer them there will likely be more asked, we're all just swinging in the dark making guesses.
