ipad mini 6 restore issue

Got locked out of my new iPad mini 6 that I got 2 days ago. Trying to do a factory reset/recover. It says that "Software for this iPad is currently not available".

Tried restoring from multiple different computers, with the same result.

Shame on you Apple. You released a new product and you haven't made the SW available for it yet??

Went to the Genius Bar and they confirmed that it was the case.

Now I'm stuck with a brick.

Apple, please solve this.
