How can I unlock my iPad Pro (iOS 15) with my Apple Watch (Watch OS 8)?
I have been able to do this easily with my iPhone for several releases now. It seems like ever since iPadOS was split from iOS, iPadOS has become the lagging stepchild in terms of ease of use features for which Apple is/was well-known…

Apple's Health app for iPhone is, also, NOT available for iPads, either.
Neither is a the default Calculator app on iPhones.
FYI, NO one here works for nor represents Apple here.
We are all, largely, Apple customers/users here, just like you.

If this is the technical answer, then thanks. But from a customer-oriented solution, this is a terrible answer. For every time I use my iPhone in aa day, I use my iPad Pro tablet 5-10 times. FOr me unlock with Watch would an ORER of magnitude more valuable for my tablet than my phone.
Unfortunately this seems to be the case with several iPhone only Apple apps — for example for some unknown reason I can’t access my Apple Health data on my iPad as well. I guess no one would ever want to look at that data on a tablet :-(
You can't as Watch has very limited functionalities with iPads.
Watches are ONLY fully compatible and capable with use of iPhone.

It would be nice but as it stands it has never been and likely won’t be an option any time soon
