Open the Contact using Contacts App

Tap edit

Scroll Down and Look for

• Ringtone
• Text Tone

Tap each one to set the tone of your choice or set it to default.

SMS and iMessage notifications settings are not different. However. please check if you have enabled Hide Alerts for a specific message thread.
