Updating my watch without it being paired

Okay so my apple watch was unpaired because I tried to update it while my phone needed to be updated, but now my phone is updated and my watch is unpaired and needs the update to pair. How do I pair my watch without the update because it always stops me? Or do I have to update it before and if so how do I do that?
