No Free Handwriting in iPadOS 15?

After updating to iOS 15 I cant free handwrite in notes anymore, it converts everything to text! I cant figure out what to do.

Try one of the other different pens/brushes.

The one you are using has a letter A on it that is for handwriting to text conversion.

Try another pen/brush, instead.
