Do you just want a new passcode? If so: Utilities>Settings>Passcode>(enter old passcode)>Change Passcode

Or did you forget your old passcode. If so follow these instructions: If you forgot the passcode on your iPod touch, or your iPod touch is disabled - https://support.apple.com/en-us/HT211080
