My daughter currently has an iphone7 plus and has asked for an Apple Watch for Christmas, we have been looking at the SE watch and it does show it’s compatible from an iPhone 6s, however we’ve been told by a tech guy at curry’s that’s only the series 3 watch will work properly with it. Does anyone have any experience with this?
The iPhone 6s can upgrade to iOS 15, so it is compatible with all Apple Watches running watchOS 8 (which is the Series 3, 4, 5, 6, 7 and SE).
The iPhone 7 will work.
When you look at the Apple Watch on the Apple website, look at the very bottom of the page, and in the fine print, they will tell you the minimum iPhone that is needed.

I would avoid the series 3 watch. Many people on this forum have problems updating the series 3 watch due to insufficient memory. With newer (and bigger) updates, that problem can only get worse. Use this link to find out which watch is right for your daughter:

I would take javaliga's advice and avoid the watch 3, 98% of questions I reply to are problems with a watch3.
