The iPhone 5 can only run iOS 12. It cannot be updated to newer versions which are required to run the apps you mention. Your phone is simply too old and does not have the components needed to run newer software.

An iPhone 5 cannot be updated beyond iOS 12.X. Fewer and fewer apps still support that version. There is no work-around other than getting a newer model phone.
