Generally speaking, it doesn't really matter. Your phone will select the correct messaging protocol (SMS or iMessage) without any intervention on your part. Also, you won't have the option in Contacts to make a FaceTime call to someone who has some other kind of phone (or who has an iPhone but who has not activated Facetime)

No, not at all.
As you type-out the message on YOUR iPhone, the “send” arrow - at the end of the line - will be blue or green.
Then …
After you “send” , the entire bubble of YOUR outgoing will be blue or green.
Yep, that's true, but FaceTime is not that popular in Indian communities even when they use Apple devices. Now all major social media and instant messaging services have built-in video call option. But detecting iOS device from FaceTime option in contacts - that's a helpful observation of yours... or maybe I'm too dumb... :|
Again, it doesn't actually tell you if the person has an iPhone. My sister-in-law has an iPhone but doesn't use iMessage or Facetime. If I didn't know because I've seen it in her hand that she has an iPhone, I would have no way of knowing from my phone. And, I've never found a situation where it matters.
It’s not a “hard / absolute” rule 100% of the time, but if you “text” them and it’s in a blue bubble, they are using an Apple device.
Blue bubble = iMessage
Green bubble = SMS / MMS
..and I hope you meant their ‘reply’ bubble is in blue if they use an iPhone, not our message.. right?
