I just updated to IOS 15 and when I open an email I get an message that says “Unable to load remote content privately”. I can select “load content” and the information appears. I have clearly selected a wrong setting. What setting(s) do I need to change so that all of the content loads and where do I find those settings?

Yes it can be turned off, however that turned out to not be the problem. It was the VPN I use. It was not turned on after I updated to IOS 15 and when I turned it back on the problem was solved.

Let's have you go to Settings > Mail > Privacy Protection. Do you have the option to turn this off?
