How do you use the # tag feature in notes with iOS 15?

Thanks this was helpful. In trying to set up another tag however it seems to only give me the option to add it to the existing tag and not allow me to create a second one.

Try to write the tags one after the other, including the # sign. If they changed to yellow, you did well. Then return to the Notes application Folder screen. A section called Tags appears at the bottom.
