The current iOS version on a qualified iPhone (your iPhone 11 Pro Max is) is IOS version 15.0.1. SharePlay has NOT been enabled in this version. SharePlay is a planned featured to be released in a near future update of iOS 15. When will this be? Only Apple knows the answer to that.
