I want to remove Apple ID from iMac and have it pure clean. I want to keep everything on my phone.

It sounds like you mostly wish to keep data files off the Mac. It will be hard to use a Mac in complete abeyance of iCloud. You can turn off various syncing services and once they are off you can delete the data from the various platforms as you wish. Do not do this before turning off the services or they will be deleted everywhere.
