It depends on how many of the steps you skip, if you restore it from an iCloud backup, and how many times you have set up an iPhone before. It would probably take about 45 minutes for all the apps from an iCloud backup and the setup process to be complete. You probably would have to actually be working on it for more like 20 minutes. It all just depends on what you are setting up.
