Is it just me, or did IOS15 break highlighting text in the notes app?
I've restarted the app and the phone with no change.

Restarting the Notes app and the iPhone were good steps to test.
If that hasn't sorted out the issue, then we'd make sure you're updated to the latest iOS 15 version. Be sure to backup prior to any updates that are available: Update your iPhone, iPad, or iPod touch

For anyone else that finds this, I updated to 15.0.1 this morning and it's fixed.
