You can actually download Safari 15.1 which fixed the problem (I had this too).
You can also restart or shutdown your laptop.

It appears that when starting Safari, it now will not either fully start up or unexpectedly quit. Please try seeing if this happens in safe mode as well: How to use safe mode on your Mac Safe mode only allows certain software to load, which can help isolate this further.
You could also test to see if a normal restart helps with your Mac, if you haven't tried that already: Log out, sleep, wake, restart, or shut down your Mac

Did he mean iOS 15 or Big Sur? I ask because he said iOS and this very problem abounds with the new iOS Safari extensions.
