Some of the features outlined on the iPadOS15 Summary page have not been released - but are expected in future releases. The Privacy Report page that you illustrate is seemingly one of those that, as yet, is missing from the package of new features - at least insofar as neither you, nor I, can find it within iPadOS15.0/15.0.1!
It’s early days for iPadOS15 - and we can expect substantial change and/or addition of features over the coming months.
I was looking for this though
Go to settings > privacy > record app activity. Toggle the switch if it is off. You will then be able to see the privacy report and save it from there.
I already did that, it says 7 days of app activity recorded, but it doesn’t show anything. Even when I save the file, it’s some json thing that m6 iPad Pro can’t read.
