is there a way to set my laptop back to factory settings for just the email, I want to take my email accounts off my laptop without losing access to them on my phone or online?

You can just deactivate or even remove the accounts in System Preferences->Internet Accounts, and that will not affect what you see in the iPhone.


What you DON'T want to do is delete the e-mails themselves in Mail, if your account an iCloud or other IMAP account, or an Exchange account, as that will also delete the e-mails on the server and everywhere else.
