I want to change the AppleID on my phone but I don't have access to the old email address
How can I change the Apple ID on my iPhone if I don't have access to the email address used for the current AppleID on the phone

If you know the ID and password signed into the phone, you should be able to sign out even if you can't access the email address. Is there a problem trying to do that?
Did you forget the email address of the Apple ID? See if you can recover the ID/password. Use every email address you can think of.

If you forgot the Apple ID (iCloud) password, enter the Apple (iCloud) ID, and click Forgot Password. See if you can get a Rescue or Notification email option if necessary. Link to contact Apple Support at the end of the 2nd article.
